Coconut Pandan Mochi is a classic steamed tiered dessert that my mother used to cook for my family throughout my childhood. The mildly sweet, soft, and chewy texture is accompanied by the subtle flavor of fresh pandan nectar and coconut milk's earthy, nutty taste. Taro Pudding, made with a creamy, purple root vegetable, rice, and coconut milk, is a cult favorite that my dad and I would fill up on whenever visiting family in Laos.
